Grateful

The title of today's post really sums up the last few days around here.  First off, I want to {again} apologize for not getting to a Friday's Top Five! this week.  Where do the days go?!?  The last week went so fast {not to mention that Monday holiday} and I felt like I didn't really have a top five for the week other than the top five reasons why not to take your hubby to Sam's Club with you, or why "all-you-can-eat-shrimp" isn't really "all- farmer- can -eat".  Those really should be separate posts entirely....

Anyway~
I have something exciting to share today!  I logged in to see how many page views I've had of my little no name, nobody knows about it, I'm a simple kinda gal blog, and GUESS WHAT?!?  I have had over 1,000 page views!  Now, I know that doesn't mean 1,000 different people have viewed it, but I also know that Makenna and my sweet mama could NOT have devoted that much time to visiting my blog : )  What that does mean is that I have a few readers out there, and that was just the little "nudge" I needed to keep on keepin' on!  So, many thanks to  my readers...we did it together...we reached a milestone along my little blogger path!  Thank you.  I appreciate all the comments, conversations, texts and positive e-mails you've sent my way!  I've learned from blogging that we all really do have a story to tell no matter how boring you think your everyday life is.

Moving on~
After this week's {pathetic} loss to UCLA, I doubt any of us will want to host a football party this Saturday, but if you do, I have a recipe suggestion.  Something different when the gang all gets together for football, cards, sewing lessons, whatevs...don't judge...everybody's gotta eat.

Spinach Tomato Orzo Soup

1 lg. onion, diced
2 cloves garlic, minced
1 box frozen spinach, defrosted
1 15oz. can Italian tomatoes
1 1lb. box orzo pasta
1 32oz. box chicken broth
2c. water
salt, pepper to taste

Saute the garlic and onion in olive oil.  Add tomatoes, spinach, broth, and water.  Bring to a boil then reduce heat to medium.  Add the orzo.  Cook 12-15 minutes until orzo is tender.

Couldn't get any easier and this was so yummy. It totally surprised me.  Give it a try!  {To make it more "farmer friendly" next time I think I would add 1# of  browned hamburger.}

*On a separate note, there was a horrible accident involving a semi and a school bus of children on their way home from school last week. It happened near Blue Hill, which isn't terribly far from where we call home. It really made me grateful for the blessings in my life and to remember not to take anything for granted. Please remember to hug your kids, kiss 'em goodnight, and tell the "farmer" in your life that you're thankful for them. Amen.*

Wishing you a wonderful week~
Nikki
