*Just Kidding* This isn't our house!
After the house was sufficiently decorated, the girls wanted to head to town and see Santa and the free movie at the Opera House. It was a fun afternoon.
Then it was time for Makenna to get ready for the Christmas Revue III.
We had a quick soup supper at our house and then headed in. It was a cold night and this recipe really hit the spot:
White Bean Chicken Chili
2- 12.5oz. cans white meat chicken
1 medium onion, chopped
1/2t. garlic powder
1/2t. popper
1 t. dried oregano
1 t. salt
1 t. cumin
1/4t. cayenne pepper
2 cans Great Northern Beans, rinsed & drained
2-14.5 oz. cans chicken broth
2- 4 oz. cans diced green chilies
Saute the onions in a little butter. Add drained chicken and heat until the onions are soft. *At this point you can transfer all to a crock pot and all the rest of the ingredients, or just heat it all on the stove if you're in a hurry like me.* Add the remaining ingredients and simmer as long as you want. Just before serving, add 1cup sour cream and 1/2 c. milk. Heat thru and serve.
Saturday the girls went with Farmer's mom to spend the night. We got in a date night Saturday night with intentions of getting some Christmas shopping done, but a quick trip to Target was all Farmer and I had in us!
Sunday morning came church, coffee, and a cow conundrum. It was fun "helping" Farmer with the chores. My only job was to count the cows to make sure they were all in where they were supposed to be. Somehow it's really hard to count to 120 when you're bouncing around a stalk field after drinking too much coffee and all the cows keep moving on you!
Anyway... I hope your Thanksgiving weekend was as exciting as ours, your cows are all in and you've got the "Griswold Spirit" at your house, too!
